Choosing the right Tofu for your Vegan Scramble

Use extra firm tofu to crumble into small egg-like chunks. Silken can often be too soft and can break apart very easily. That said, preference is key so choose what works best for you. If you are new, stick to extra firm which is available in most supermarkets in the UK.

Tofu is incredibly rich in calcium and therefore makes for a great vegan replacement for eggs. Calcium is needed for the formation of bones in the body, with too much or too little causing bone-related issues inluding excess or under growth. High-calcium, dairy-rich diets have not always been associated with improvements in osteopathic health, but often too much dairy and too much calcium can cause serious issues.

Per serving, this vegan tofu scramble dish will provide 56% of the average persons recommended daily intake of calcium which is incredible considering this is merely a component of a dish and not a complete meal in itself (I serve mine with my healthier alternative to baked beans - see below).

As we all know, plant based is totally cholesterol free - so enjoy your scrambled tofu with the knowledge that it is far less detrimental for your arteries than fat-dense eggs.

Tofu is also incredibly rich in tryptophan which is an incredible essential amino acid needed for our bodies to synthesise the very chemicals which allow our bodies to fall asleep at night. So tofu can help you get a better nights sleep. However, this does not mean it makes you more sleepy!

Turmeric and Ground Black Pepper

Turmeric is a root commonly used in Indian dishes and curries.

It is also traditional at Indian weddings for turmeric to be involved ceremonially with people throwing around and coating themselves in turmeric!

Turmeric is packed with goodness - and has properties which can reduce mutations in the body and encourage the termination of mutated cells through a process called programmed cell death.

This is all thanks to curcumin, the active ingredient in turmeric becoming known for its potential anti-cancer benefits.

When combined with crushed black pepper the absorption of curcumin is greater, with many only serving turmeric paired with black pepper. This is all thanks to piperine in black pepper which can boost absorption of curcumin by as much as 2000%.

Turmeric is also a brilliant anti-inflammatory - so get it into your diet in as many meals as you can! Experiment with new cuisines and new foods all the time as these ingredients found across varying cuisines bring an array of flavour experiences and associated benefits for the systems within our bodies.

Kala Namak or Black Salt has a Convincingly Eggy Flavour

Thanks to the sulphuric smell of black salt, also known as Kala Namak, this ingredient makes a brilliant addition to help your scrambled tofu tast even more like the much more harmful animal-derived counterpart - the egg.

This is not often available in the supermarket but is easy enough to get hold of in whole food stored and online!

Ingredients

  • 500g extra firm tofu
  • 1/2tsp turmeric
  • 1/2tsp black pepper
  • 1tsp salt
  • 2 spring onions, finely chopped
  • 200ml oat milk

Method

Crumble the tofu with your hands into small scrambled-egg-sized clumps.

Heat a large frying pan and add the tofu. Stir regularly and use small amounts of the oat milk as required to stop any sticking.

Add the turmeric, black pepper and salt and continue to stir.

Serve topped with spring onions.
