Ingredients

  • 1tbsp rapeseed oil
  • 1 large red onion
  • 5 cloves garlic
  • 1tbsp fresh chopped ginger
  • 1 red bell pepper
  • 300 ml soy milk
  • 100ml coconut milk
  • 400g chopped tomatoes
  • 250ml vegetable stock
  • 1.5tsp turmeric
  • 1tsp cumin
  • 1tsp fenugreek
  • 1/2tsp ground black pepper
  • 1tbsp curry powder
  • 1/4tsp cayenne pepper
  • 180g red lentils
  • 1 cup spinach
  • 180g brown rice

Method

Finely chop the onion, garlic, red pepper and ginger.

In a large bowl, combine the coconut milk, soy milk - you can use any plant milk - chopped tomatoes and stock.

In a large saucepan, heat the oil over a medium heat.

Fry the onions for 5 minutes, then add the garlic, ginger and red pepper.

Add all the spices and stir well.

Add the stock and tomatoes mix. Stir well.

Cover and simmer, stirring occasionally for up to 40 minutes.

Cook the rice according to instructions on the packaging.

When the rice is cooked, and the lentils have simmered for their full time you can now serve and enjoy!
