Guacamole Recipe with Homemade Vegan Nachos

Guacamole is a delicious staple recipe, great for homemade nachos, and is so simple to make plant based or vegan.
Vegan Nachos and Guacamole
Chunky, spicy and so simple - this homemade nachos and guacamole recipe will compliment your favourite vegan chilli.
- 1 mug whole wheat flour
- 1 mug oat milk
- 1tsp Himalayan pink salt
- 2 avocados
- 1 red onion, chopped finely
- 1 lime, juiced
- 5g coriander leaves, roughly chopped
- 12 cherry tomatoes, chopped finely
- 1/2tsp Himalayan pink salt
- 1/2tsp black pepper
- 1/2tsp chilli flakes
Preheat your oven to 180 degrees celcius.
In a large mixing bowl or food processor, combine the flour and salt. Gradually add the oat milk and mix until you form a dough that is not sticky.
Roll the dough as flat as possible, to around a couple of millimeters thick. Place in the oven for 10 minutes on a large baking tray, or multiple baking trays. After 10 minutes, turn them over and cook for another 10 minutes. They are ready to come out of the oven when they are solid and snappable.
Remove the seed and separate the flesh from the avocados before mashing into a thick pulp with a fork in a large mixing bowl.
Add the remaining ingredients to the bowl and mix well.
When you can handle the nachos, roughly snap the flat bread into bitesized, dippable pieces and serve with the guacamole.
