Beetroot Soup with Carrot, Orange and Ginger

Simple, delicious and nutritious!

  • Ingredients
  • 1 large red onion, diced
  • 3 beetroots, peeled and cubed
  • 2 large carrots, diced
  • 30g fresh ginger, chopped
  • Juice of 1 orange
  • 2tbsp miso paste with 1.25 litres of warm water (to make a stock)
  • 1/2tsp ground black pepper
  • Optional pinch of salt
  • Method
  • Add the red onion to a large saucepan over a medium-high heat and sauté until translucent using water little by little to prevent sticking.
  • Add all remaining ingredients to the saucepan and bring to the boil for 25-30 minutes.
  • Blend and serve!
